Beaman Family, Dessert
Filling:
2 c. sugar
2 T. cornmeal
1/8 t. salt
3 eggs
1/2 stick margarine
1/3 c. buttermilk
1 t. vanilla
Pastry:
6 oz. cream cheese, at room temperature
2 sticks margarine
2 c. sifted flour
Filling:
Stir together the sugar, cornmeal, and salt.
Beat the eggs slightly and add to the sugar.
Beat in the margarine, buttermilk, and vanilla.
Spoon into the unbaked pastry shells, filling 3/4 full. Bake at 375 degrees for 25 minutes.
Pastry:
Cream the cream cheese and margarine until soft. Stir in the flour just until incorporated.
Chill the dough.
Roll out on a floured board.
Cut with a 3” cutter and fit into tiny muffin tins.
